S'mores

50's Prime Time Cafe - MGM Studios (Hollywood Studios)

Such a simple recipe, yet killer good. I can easily make myself ill on these!

Place graham crackers on a cookie sheet or plate and cover with chocolate bars. Broil for a few seconds to soften the chocolate.
Put 6 marshmellows on each cracker; broil until browned.
drizzle chocolate syrup over the top. Enjoy!

'Ohana Bread Pudding a la Mode with Bananas Foster Sauce

Every time I eat at 'Ohana I wait impatiently for this dessert. It always requires seconds...or thirds...or fourths... or, well, you get the picture. For father's day this year I decided to make it for my husband and father-in-law.  While it takes a bit of time to prep, it's really not that hard to make. Our only issue was that we didn't get high enough proof rum and it didn't want to flambe off the sauce! Due to that, we all felt a bit warm and happy after dessert. :-)

Of course this is 5 mickeys, so I'll give you the recipe. You HAVE to try it!

5 large eggs
1/2 t salt
1 1/2 c sugar
1/2 t cinnamon
1/8 t ground nutmeg
3 c whole milk
1 loaf chalah bread or egg-style bread, enough to fill 10 cups, cut in 1/2 inch cubes
1 8-oz can crushed pinapple, drained
1/4 c sweetened shredded coconut
1/4 c raisins, optional (I didn't use becuase I didn't have any...I thought I did...oops)

Preheat oven to 350 F. In a large mixing bowl, whisk together eggs, salt, sugar, cinnamon, nutmeg, and milk.
Stir in bread cubes, pineapple, coconut, and raisins. Pour into a 13 x 9 x 2 in. pan coated with cooking spray.
Bake for 1 hr. and 10 min. Removed from oven and let stand for 5 min.
Serve the hot bread pudding with a scooop of vanilla ice cream and top with warm bananas foster sauce.


Sauce

1 c dark brown sugar
 1/2 c corn syrup
1/2 c unsalted butter
1 c heavy cream, divided
1/2 c spiced or dark rum
1 t vanilla extract
3 bananas, peeled and sliced

While the bread pudding is baking, in a medium saucepan over high heat, combine brown sugar, corn syrup, butter, and half of the cream. Bring to a rolling boil.
Boil for 10 minutes, then add remaining cream. Boil 1 min. more.
Add rum and vanilla. Flambe using a long-stemmed lighter. Let boil until the flame goes out.
Reduce to a simmer and stir with a heatproof spatula.
Add bananas. Remove from heat and set aside.

This restaurant is the main dining room on the Disney Magic Cruise ship. If you go on board, at least one of your meals would be here.
 
Yum and more yum! Imagine stacks of fresh veggies mixed with parmesan cheese all sitting on top of a portobello mushroom. Mmmmmm. You mouth is water right now isn't it???? The stack contains yellow squash, zucchini (which I didn't use before I forgot it...oops), fresh spinach, red onions, beefsteak tomato, portobello mushrooms, cherry tomatoes, parmesan cheese, tomato sauce, and salt/pepper. The stack itself doesn't take long to cook, but it takes a long time to do all the prep work. Give yourself 45 minutes or more for all the cutting and sauteing you will be doing before these get stacked and put in the oven. Totally worth the effort.

As I have stated before, I don't like shrimp. Greg was my taste tester on this one. He said it was good, but nothing amazing. A basic cold shrimp salad. Since I didn't taste it, I don't have much to report. 3 mickeys.

Citrus Rice

By far this is one of the best recipes in this book. It contains rice (of course), salt, butter, celery, onion, chopped orange peel, chopped lemon peel, orange juice, and chicken broth. You cook the veggies and fruit peels in butter until tender, then mix it with the pre-cooked rice and other ingredients and bake it in the oven. I will definitely make this again!

Mac and Cheese

There is almost no possible way to make mac and cheese bad. I like it in all forms. This recipe was no exception. It was very good. I can't say it's the best mac and cheese I've ever had, but it was good! I used regular mac instead of the rotini or shell pasta the recipe calls for. The recipe is simple - margarine, flour, milk, american cheese (I used velveeta), mustard, salt and pepper.  3 mickeys.

Fantasia Cheesecake

I love cheesecake. So does my husband...perhaps more than me. This one however, we did not love. I don't know if it was faulty cooking or just a bad recipe. You can be the judge. It has an average graham cracker crust and the filling is fairly average also. The recipe tells you not to overmix the batter. Well, I guess I didn't mix it enough because my cheesecake was lumpy. The texture was horrible. The sour cream topping was also gross. It was like spreading straight sour cream on your cheesecake. Yuck. We only give it 1 mickey.

Polynesian Ribs & Polynesian Village BBQ Sauce

Saturday night camping dinner - RIBS! The honest truth? I don't really like ribs, especially fatty ribs such as baby back ribs. This is why having Greg AND Nathan along for camping made it a good time to cook this recipe. At least someone would appreciate it! 

I thought they were really fatty, but the guys liked them. I had to break them up into individual ribs earlier than the recipe called for. The recipe wants you to cook them as a big piece for 30 minutes then break them up into pairs and cook for another 10 minutes. If I would have done that it would have taken 2 hours to cook these. I broke them up into individual pieces and it still took 45 minutes. Maybe that was because I was using a camper oven, maybe not. You can try it and tell me how long it took. The BBQ sauce is listed in the back of the book under the "sauces" category also. Because of that, both are being judged in this post. The ribs get 3 mickeys, the BBQ sauce gets 4!



Cinnamon Sugar French Toast

This past weekend my husband, son, brother-in-law and I headed out for a weekend camping trip in our new camper. Since I had a mini kitchen with me, I decided this was the perfect opportunity to try out a few more Disney recipes on everyone! For breakfast on Saturday we had this french toast.

It wasn't anything unique, but it was good. Any time you use sourdough bread for french toast and add sugar it makes french toast wonderful.  The interesting thing is that you use safflower oil to fry it in. This recipe is also in the second book. The first cookbook says you can use soybean or safflower while the second book says to use soybean. Since I couldn't find soybean oil, I used safflower. 4 mickeys!

Lime Chiffon Pie

I said it before but I'll say it again...I'm not a fan of lime desserts. I did of course give this a try...and it tasted like a lime dessert. So, with that, I turned over the eating and judging to my husband who loves lime desserts. For fun I put a lime mickey on the top. My husband thought it was really good and had an interesting texture. He gave it 4 mickeys.


Angel Food Cake

For Memorial day I was having my grandma over to celebrate. I decided we needed some sort of strawberry dessert, and angel food sounded good. Luckily for me Disney provided me with an angel food cake recipe...check 2 things off at once! The strawberry sauce is made of fresh strawberries, sugar, water, and strawberry jam. I used fresh farmers market strawberries. I think that's what made it sooooo good. I did get distracted and left the cake in a bit too long, so it's a bit darker than it should be.

Patriots Pot Roast

I have eaten in this restaurant a few times and have never had a bad experience. Their food is wonderful! This is one of the few original Disney restaurants that has not been changed or renamed since the first cookbook was printed. This particular dish has been a favorite of mine and my husbands.

While it doesn't taste exactly the same, it is very close and still very good. If you used a higher grade beef than bottom round roast it would be better (my suspicion is that Disney does use a better cut).

With a better cut, I would give this 4 mickeys...with the cut in the book I give it 3.
