UPDATE!

Now 4 months into my Disney cookbook adventure, I wanted to give you an update on how far I've made it.

Brandied Apple Cobbler

Now replaced by a caramel apple tart, this is no longer on the menu.

It took a bit of work to make this dessert, having to make the short dough, cobbler filling, and vanilla topping. For all the effort and the great smell, it really wasn't sweet. In fact, it was pretty bland. It gets 2 mickeys. I have had much better cobbler. I was sadly disappointed.

Sauteed Zucchini

I love zucchini so I will be fond of any zucchini recipe, but getting my husband to eat it is a different story. He actually LIKED this recipe, which means it was a huge success! Super easy and fast, it gets 4 mickeys!

Tenderlion Chasseur & Rice Pilaf

As mentioned before, this restaurant no longer exists.

This recipe knocks out 2 at once! It calls for you to serve it
on the rice pilaf, also in the cookbook. First off, I would recommend that you actually use beef tenderloin steaks, not round steaks like I did (again, I had them in the freezer and needed to use them). It would have been WAY more tender. The sauce is great though and so was the rice. 4 mickeys to both!

Chicken Cashew


Polynesian Review - Polynesian Village Resort

The only thing I did not use in this recipe was the fresh ginger - I used ground ginger instead. I loved how easy and quick this recipe was, something that you don't always find in Disney recipes. I served it with the sauteed zucchini.
4 mickeys!

Scotch Barley Soup

This recipe was a first to me...actually a couple of firsts. I had never cooked with leeks, turnips, or lamb before. I am typically anti-lamb/calf cooking, but for the sake of this recipe I allowed it. I was pleasantly surprised! My husband and I typically don't like leeks, but you couldn't even taste them in this soup, nor could you taste the turnips! The lamb was noticeable (you can see the oil on the soup) but good. I used regular barley instead of pearl barley because I have barley that I need to use up! It still tasted fine. It also makes A TON of soup, so we froze most of it. 4 mickeys to you soup!

I blogged on these earlier, but just as a remembrance of when my mom made them. I decided to make them myself. The only thing I did differently was that I didn't put them in paper cups (I didn't have any!). A very good corn muffin, but I still prefer mine a bit moister. The sweetness of good though! 4 mickeys!

Sopa Azteca (Traditional Tortilla Soup)



San Angel Inn Restaurante - Mexico Showcase, EPCOT

I posted two pictures of the recipe because you can't see that is underneath once you pour the soup on top! You start with putting the avacado, fried chili and fried tortilla strips on the bottom of the bowl, then pouring the soup over the top, garnishing with cheese and sour cream. It was very good! It doesn't contain any meat, but has a chicken broth base. It isn't really spicy but has a hint of spice flavor. The San Angel Inn is one of my favorite EPCOT restaurants. My husband and i ate there on our honeymoon. This soup is still on their menu!
It gets 4 mickeys!

Great pancakes! The recipe says you can thin them out a bit, so I did. We ate them with locally tapped maple syrup and it made them amazing! 4 mickeys to the pancakes!

This was..ok. 2 problems arose. One was my fault, one was the fault of the recipe. First off...I burned it. I was dealing with the child and forgot about it. Second problem? It's just too thick. If there was a way to make it a lighter bread than it would be much better. I took it to work with me 3 times and only ate it once. It gets 3 mickeys.

Once again, yum! If you don't like bread pudding like my husband, then you wouldn't care about this recipe. I thought it was great though! To get the stale bread squares I cut up the bread and left it sit out overnight. Tada, stale bread cubes! The lemon sauce really makes the dessert. 4 mickeys!

Banana Peanut Butter Cream Pie

Such a simple recipe and so yummy! It uses easy pre-made ingredients such as a graham cracker pie shell and whipped topping. Of course you could whip up your own topping and grind up your own graham crackers, but why add an hour to your prep time? It has a great, fresh taste. 4 mickeys for you!


Farmers Market Tuna Salad

Comparing this recipe to other tuna salad recipes, it gets high marks! Of course if you don't like tuna salad then you won't care. :-) It doesn't contain any mustard, but it doesn't need it. In fact, mustard would ruin it. I give it 5 mickeys!
1 can chunk light tuna packed in water
1 can chunk light tuna packed in oil
1/2 cup ground celery
1/2 cup mayonnaise
1/4 cup drained, crushed pineapple
1/2 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon white pepper

Put tunas and celery in a strainer and drain overnight in the refrigerator. Chop tuna very fine. Mix tuna and celery with remaining ingredients until well blended. Chill for at least 1 hour before serving.

Eggs Ranchero

Yum! So our attempt at sunny side up eggs failed...we flipped them just because we both don't like runny eggs...but beyond that fact they were tasty! The Chorizo sausage didn't stay in pieces like the recipe called for...it became a meat sauce, but the sauce would be good on more than just eggs...enchiladas, burritos, etc.

We give it 4 mickeys

Clam and Corn Chowder

This is no longer served at the garden grill, as the theme of the restaurant has changed.

The recipe calls for you to take the clam chowder recipe from Cap'n Jack's and add more ingredients. Because of this I made both recipes in the same night so I wouldn't have to remake the clam chowder. This soup is better than the clam chowder, but still average. It gets 3 mickeys.

Cap'n Jack's Oyster Bar - Walt Disney World Shopping Village

History: Cap'n Jacks was part o the Walt Disney World Shopping Village, now called Downtown Disney. It changed it's name in 200 to Cap'n Jack's Restaurant. I have eaten there once before and had crab cakes...which were FULL of shell. Yuck. My dad has eaten there twice and enjoyed both meals...I guess it was just what I got. The restaurant is located over the water. Everything about the restaurant is about the same as it was in the beginning, just kept updated. They still serve this soup.

It was a fairly easy recipe to make and really didn't require too much time. I don't eat much seafood, but due to my plan to cook through these books, I am determined to try everything. Once I saw the clams I changed my mind. I did try the soup though, I just avoided the clams. Be aware that it requires 3 cups of clam juice...a minor detail I noticed once I was already cooking and only had 1 cup. Mine wasn't as "clammy" because I used water instead for the last 2 cups. It was good, but nothing exceptional. I give it 3 mickeys.

Can you tell I'm trying
to catch up on my blogging? No, I didn't cook 10 recipes in 2 days...I have made the past few posts over a series of a few weeks and am just now catching up to blogging about them. My 4 1/2 month old son doesn't always give his mother time to blog :-)

This recipe is pretty easy to make. It gave me a reason to use my kitchen aide shredder attachment for the first time. I got that shredder for my wedding shower...7 years ago. It worked well, I'm happy to say! Make sure you shred the carrots really fine. Combine heavy cream, shredded carrots, raisins, pineapple chunks (halved), sugar, cinnamon, and mayonnaise and you have a yummy side sala
d. It sounds and looks kind of gross, but it's very good. I give it 4 mickeys!
