Key Lime Pie

The Outer Rim is a lounge overlooking the bay. It used to called the Monorail Club Car, but apparently changed it's name before this recipe book was published.

While zesting the lime proved difficult, the pie is fairly good. I used a graham cracker crust which was a good choice because it added sweetness to an otherwise not-so-sweet pie. The real lime flavor comes in when you get a piece of zest. The whole pie has a buttery texture to it. Nothing exceptional. 3 mickeys.

Chicken and Rice Salad

This was a pleasant surprise. You wouldn't think that a comb of chicken, rice, carrots, raisins, cantaloupe, mayonnaise, sour cream, and Worcestershire sauce would taste good, but it does! It was great! It would make a great summer lunch main dish. 4 mickeys!

Cocnut Dip

Another easy, great recipe. You can't beat mixing up sour cream, coconut cream, and brown sugar. It took me all of 2 minutes to make this fruit dip. I only tried it on cantaloupe but it was good! I would definitely make it for a party! 4 mickeys!

S'mores

I have made this recipe multiple times, but made it again just to take a picture...and of course I burnt the marshmallows. Good for me since I like blackened marshmallows, bad for you since it looks gross. Just imagine melted Hersey bars on graham crackers with 6 marshmallows roasted on top with a drizzle of chocolate sauce. So great. For ease of baking and taste it deserves 5 mickeys!

Pioneer Hall Cheese Dip

Another easy, good recipe. It would be great to make to take to a party. For my personal taste, I might add a bit more Tabasco next time just to up the spice a good, but it was good none-the-less. The recipe calls for you to eat it with crackers or fresh veggies. While I didn't try veggies, the crackers were good, but tortilla chips were even better! Perhaps non-ritz crackers (no butteriness) would be best.  4 mickeys!

Queso Fundido

 San Angel Inn Restaurante - Mexico Showcase, EPCOT

3 ingredients, fast and easy! Muenster cheese, chorizo sausage, and flour tortillas! It was great! I even took the left over to work and ate it for lunch. So good. Not great as a meal, but a great appetizer or a portion of a meal. 4 mickeys!

Waldorf Salad

What a nice, light, easy recipe. While it's good, it's nothing spectacular. The best part is the hint of cinnamon you can taste when you eat it.

BLICH BLICH YIK YUCK BLACHHHHHH! Horrid, absolutely horrid. If you want a tuna casserole that curdles your stomach and yet contains NO tuna, here it is.  Maybe this is an over reaction, but it was not good. Greg was able to eat it, I couldn't even swallow it. You better really love seafood slop if you make this. 1 mickey. Ick.

Cheese Quiche

Wow, talk about a LOT of rich cheese! This was a great recipe, but it's almost so rich I would call it a desert! We didn't have quit enough Gruyere cheese left over so we filled in the rest with Swiss. Very good. 4 mickeys!

Contemporary French Toast

So...this picture doesn't look quite right because I forgot a step until later. I forgot to dunk the freshly made toast in the powdered sugar. I remembered a few minutes later AFTER I had buttered mine...oops. So I picked it up, dipped it, and snapped a fast picture. I'm sure the real thing is prettier :-)

Easy to make and good. The sourdough bread gives it a nice kick to offset the sweet. I used a light sourdough, a choice I would make again. The last time I used regular sourdough for french toast it was a bit overpowering. The light stuff is perfect. 4 mickeys!

Once again, a simple recipe using easy ingredients. The idea of soaked bran flakes in a muffin sounds gross, but they are actually very good. I can't say they were tempting to eat, as the last few of the batch got moldy and went outside to the birds, but for a good breakfast on the go (or better yet - warm with butter) they are tasty. 4 mickeys!

Blueberry Muffins

A nice, easy home made muffin recipe. The recipe calls for 12 muffins but they come out really small. You could make 6 nice sized muffins instead and it would be a bit more filling. Better than your average muffin, but not the best ever. 4 mickeys to you muffins!

Maple Glazed Salmon with Onion-Mashed Potatoes

Background: Animator's Palate is aboard the Disney Magic, part of the Disney Cruise Line. It is located on deck 4 and serves Pacific Rim style food.

Such an easy recipe, and oh so good! I used frozen salmon, so I'm sure if you used fresh salmon it would be even better! It is worth the effort to cook! 4 mickeys!

Eggplant parmesan

I have tried to make eggplant parm in the past and within 2 bites I threw it in the dumpster. I didn't go into this recipe very optimistic considering that it was also super easy. I was pleasantly surprised! This is the first eggplant Parmesan that I have enjoyed! While it wasn't the most amazing recipe on the earth, it was really good. 4 mickeys!

PIzza Quiche

I haven't blogged for a while, but it doesn't mean I haven't still been cooking with Mickey! Today my goal is to catch up on my food blog. Let's see if my 8 1/2 month old son will let me...

This quiche is pretty yummy! The downside? Making the Caponatta, though I have to say it looked more complicated than it was. Downside #2? Gruyere cheese is really expensive, but well worth the buy if you can. Yes, you can substitute with more swiss, but swiss doesn't have the bite that Gruyere has. Use it if at all possible.  Over all, I would add more pepperoni since it only called for 8 slices. Still good. I give it 3 mickeys.
