Northern Bean Soup

Once again, I forgot to take a photo before we snarfed down the food. Sorry! The bean soup was really good. As in the past post, I cheated and used canned beans. The recipe was super easy and really fast for soup. 4 mickeys!

Pasta E Fagioli (Italian Bean Soup)

I cheated with this recipe and used canned beans instead of dry ones that you soak overnight. It was really good. To be honest, I made it so long ago that I don't remember much. Sorry, I'm a bit behind on a few of my recipe blogging. It was good though....4 mickeys.

Pioneer Barbecue Sauce

At the back of this Disney cookbook is a "sauces" section. I decided to start working on this section, so here it is!
I put this BBQ sauce on chicken and cooked it. It was great! It's not the most AMAZING sauce in the world, but it's better than average. It has a little bit of a sweet kick to it. 4 mickeys!

This recipe looks way more advanced than it actually was. It only took me around 40 minutes to prepare! I know I know, it looks like slop on a plate. The crazy thing is, this is one of the best recipes in the book! The sauces are great and the coating and flavoring on the tenderloin is amazing. If you don't like seafood or are allergic to it, you could easily leave the scallops out of this dish. They didn't add anything to it. We were very impressed with Southern Open. 5 mickeys!

Polynesian Shrimp Salad

Thanks to my husband (snarf snarf) there is no picture of this recipe. You will just have to use your imagination. Close your eyes and imagine small shrimp in a mayonnaise sauce flavored with worchestershire sauce, lemon juice, salt, pepper, and bits of celery. The mixture is placed in a lettuce cup with a lemon wedge and fresh parsley for a garnish. Ok, so I didn't dress it up because again (snarf snarf) it was gone before I could attempt to pretty it up. From his opinion, it was average. 3 mickeys.

Fish 'N Chips

Rose & Crown Pub & Dining Room - EPCOT

It's taking me a while to get through all the seafood recipes. Let's face it, I'm not a big seafood fan. However, I do like fried fish, and you can't beat a good beer battered fish!  Our "chips" were sweet potato fries. It wasn't an amazing fish recipe, but it was still good. Super easy to make, good to eat, that deserves 4 mickeys.


Burgundy Beef

Liberty Tree Tavern - Magic Kingdom

Liberty Tree Tavern is perhaps my favorite restaurant in the Magic Kingdom. I've been there multiple times and have never had a meal I didn't fully enjoy. This recipe was also good. Not 5 mickeys good, but above average. It didn't take very long to prepare at all. It had that wine flavor to it which the onions complemented nicely. 4 mickeys.

Chicken Parisian

Verandah Restaurant - WDW Shopping Village

Wow! This was great! I had been putting off cooking this for a while because it looked like it would take a long time to make (and I have a 16 month old)...but it only took me about 40 minutes from start to eat! It wasn't a full 5 mickeys, but came close. The hollandaise sauce was so simple to make. I was a bit nervous about making real hollandaise for my first time ever, but it turned out really well.  4 mickeys!

Steak Sandwich

Yachtman's Steakhouse - Yacht Club Resort

I at breakfast at the restaurant last year.  They have a great breakfast buffet by the way! :-) Their dinners are expensive, but I'm guessing this recipe is on their lunch menu. It really wasn't all the impressive...steak on a bun. The spiced, fried onion rings are really good though. Add some spiced mayonnaise and it would make the whole thing better. It is a dry sandwich. Add some toppings and it would be great! 3 mickeys the way it is, 4 if you fix it up.

Spit Roasted Chicken

The Crystal Palace - Magic Kindgom

The Crystal Palace is a buffet style restaurant. The recipe was sssooooo easy. It made a good roasted chicken, but it was nothing amazing. The spices (rosmary, salt, and thyme) were good, but they have you rub it inside. You could barely taste it when it was cooked. I would reccommend rubbing the whole chicken with the flavorings. By the way, the name is deceiving... you don't actually roast the chicken on a spit. You put it in a pan in the oven! 3 mickeys.

Sauted Mushrooms and Sausage

Verandah Restaurant - WDW Shopping Village

A simple recipe with a simple flavor. It is supposed to be served over toast points or noodles, but what we had on hand was rice, so we improvised. It's basically sausage and mushrooms cooked in a burgundy wine beef broth. The flavor took over the sausage flavor. Fairly average, 3 mickeys.

Chicken Mediterranean

While Chef Mickey's used to be at the shopping village, it is now inside of the Contemporary resort as a character buffet.
 I was far from impressed by this recipe. Imagine cooking chicken in tomato sauce, sitting it on rice and putting olives on the top. That's all there is to this. Pretty bland and boring. Only 2 mickeys. So sad.

Gourmet Double Chocolate Chunk Cookies

Wow, these cookies are incredible! The bake shop is still on main street, so I think it's worth checking out if you get a chance. I don't know if they still sell these or not, but I'm definitely making them again! The recipe calls for semi-sweet chocolate chips but I didn't have any, so I used milk chocolate chips instead. 5 mickeys. That means you get a recipe :-)

1 C. butter                                 1 1/2 C. flour
1 T. brown sugar                       1/4 t. baking soda
1 C. white sugar                        1/4 t. salt
2 large eggs                               1 1/2 packages (18 oz.) semi-sweet chocolate chunks
1/4 t. vanilla extract
1/4 C. coca powder

Preheat oven to 375. Cream butter, sugars, vanilla, and coca powder. Stir in remaining ingredients and blend well. Refrigerate for 30 min. Drop dough by rounded teaspoonfuls onto an un-greased cookie sheet about 2 inches apart. Bake until cookies are set (5-8 min). Cool slightly and remove from pan. When making large cookies, press down slightly on cookie dough to help cook more evenly. Bake slightly longer (8-10 min).
 

Coquina Cookies

 Super easy to make and not too bad...Okay, that depends on who you ask. I wasn't impressed, but I did finish them in time, so that says something. My husband didn't like them at all. They have a sticky, spongy texture to them that takes some getting used to. Only 2 mickeys.
 

Strawberry Loaf

Farmers Market - The Land, EPCOT

This was a fairly simple recipe to make, but by far not impressive. Don't get me wrong, it wasn't bad. It was literally pound cake with strawberries and whipped cream. The pistachio nuts were the best part. Only 2 mickeys, sorry strawberry loaf.
