Chicken Liver Saute

Just to be clear, I don't eat chicken livers. Greg does. Yes, I have a biology degree and can handle guts. The thing is, I dissect guts, not cook them. I made it through the cooking process though. Greg said the sauce was really good and could be used on any other kind of meat. I kinda over cooked the livers. Let's face it, I'm not an expert liver cooker. It looks like a pile of puke to me, but overall he gave it 3 mickeys. I couldn't even stand watching him eat it!

My husband loves chicken piccata. I have to say that when I have taken a taste of his chicken piccata at various restaraunts I haven't been all that impressed. I did, however, enjoy this recipe. The great thing about it was how easy it was to prepare. It didn't take long at all either! If your looking for a good chicken piccata recipe, this is it! 4 mickeys!

Coconut Shrimp

Since I'm not a big sea food person, I let Greg judge this one. He said it was good, but average coconut shrimp. Overall this was really easy. Prep the shrimp, dip it in batter, dip it in coconut, then fry. Wha la!

Wow. Way, way, way, WAY to salty! I cheated and used frozen broccoli, but that wouldn't have made a difference. Maybe it was the broth I used or the bouillon. I'm not sure. But it was like drinking liquid salt. I think it would be good if you could find a way to delete the salt problem. Maybe use low salt broth and bouillon and don't add any extra salt "to taste." Something has to change though, because it was close to inedible.

This is a super easy recipe, and fairly good too. You could make this as fast and easy or as long and hard as you wish. I used instant potatoes and store bought sausages that I had frozen. You could make home made potatoes and fresh sausage. That's all up to you. It was nothing amazing, but still good. 3 mickeys.
