Florentine Sauce

  This recipe is in the "sauces" section. It informs you to serve the sauce over noodles or pasta. I decided to add a grilled chicken breast into the mix to turn it into forentine chicken and pasta. It was easy to make but not very impressive. The main reason why I didn't enjoy it was the strange fish flavor it had. Note: there is nothing fishy in it. I'm not sure if that flavor came from the spinach or not. Because of that, it only gets 2 mickeys. Sorry florentine sauce.

The recipe looks simple and fast. It's not. The biggest reason is that it has so many elements - sauce, crab, steak, asparagus, and toast. The Bearnaise sauce is great. I would make it again. It was fairly easy to make, but took some devoted time to stand and whip. Again, I didn't eat the crab (which is sad because I like crab) but I did eat the sauce. I like the fact that the sauce does not contain any shellfish, therefore if you do have an allergy like I do you can still eat the meal, just leaving the crab off the steak. The asparagus is cooked by boiling it in water and chicken bouillon for a few minutes. I have never cooked asparagus like this before, but it was very good. Overall this recipe gets 4 mickeys. Even though I'm not giving you the recipe, you should still try it if you have the book. It's worth the effort!

Shrimp and Cheese Omelet

Since I have developed a shellfish allergy after having my son, I leave the shellfish taste testing to my husband. Don't worry, I made myself an omelet...mine went southwestern with homemade salsa and cheese. :-)

According to Greg, the omelet was good. He was sceptical at first if shrimp and eggs would taste good together. The shrimp is cut up and put into a sauce, the cooked into the middle. It only took about 20 minutes to make.

Banana Bread

I love banana bread. This recipe was no different. It had a great nutty, yet sweet flavor. The texture was perfect - not to dry, not too moist. The top even turned into a sugary crust. Well worth the 10 minutes it took to mix it up! :-)
Super fast and easy, very yummy, 4 mickeys!

Over all this was a very easy recipe to make. The meatballs were great - I would make them and use them in other ways. Again as in past recipes, this is a very salty soup. The flavor was great, it just needs a salt reduction.

First let me say that I hate coring apples when you can't cut them open! I had to get my husband to do it. Secondly, it's impossible to get that pretty green filling into the apple without a piping bag. The apple cooking and cooling took a bit of time, but overall the recipe wasn't too bad. I thought the alcohol in it would have a stronger flavor but it wasn't very noticeable. Not too bad. 3 mickeys.


Seafood Marinara

The great thing about this recipe is that you can make the seafood part optional. Since I had my son I seemed to have developed a shellfish allergy. Being able to eat the the sauce without the shellfish was great. I added in the shellfish for my husband. In reality it was still a very average sauce. 3 mickeys.

Mikado Rice Salad

What a great rice salad! Okay, so something about it wasn't great. The onion. The extreme amount of onion. The recipe calls for 1 cup of onion. Compare that to the 1 cup of rice. Yes, extreme onion. My advice? Use 1/4 cup of onion and it would be perfect. 4 mickeys (with the notion of less onion).

Another french onion soup recipe, another recipe with WAY TOO MUCH SALT! Seriously, cut back the salt a LOT. I didn't make my own beef stock as it called for in the recipe (Sorry, I was lazy that day and used canned beef stock). That accounts for some of the salt problem. I would still cut the salt back a lot. I can't give you a great estimate of the quality of this recipe because literally all we could taste was salt. I think with the salt reduction it would get a much higher rating. Currently though, it only stands at 2 mickeys.

With this recipe you have a choice - use it as a dressing or make it into a dip. I decided to go the dip route that way if it was horrible it didn't ruin all the veggies. :-) It wasn't bad, but it does have a strong curry flavor. That's a great flavor if you love curry, but it you don't it could be overwhelming. I do like curry so it didn't bother me too much. I had no desire to eat more of it though, so it only gets 3 mickeys.

Coconut Mousse

Yum yum yum! This was such a yummy dessert. I typically only fall in love with desserts that contain chocolate, but this was was amazing.  It takes a little bit of time because the different stages have to cool before it can be mixed, but it's worth the effort. 5 mickeys means a recipe!




1 t unflavored gelatin
1/2 c cold water
1/3 cup sugar
2 T powdered milk
1/8 t salt
1 c whipped topping or heavy cream
3/4 t valnilla extract
1 drop yellow food coloring
2/3 cup shredded coconut

Soak gelatin in 1/4 c of the cold water for 2 min. Place container of gelatin in a pan of hot water and heat until gelatin dissolves. Cool to lukewarm.
In mixer bowl, combine sugar, powdered milk, remaining 1/4 c water, salt, whipped topping or heavy cream, vanilla and food coloring. Beat until thick. Slowly beat in gelatin. Fold in coconut. Chill until firm.

Fish Creole

Another recipe from the sauce section. As recommend by the cookbook, I put the sauce on fish - tilapia particularly. It was a good sauce. It would also be good on hot sausage or chicken - really any meat!

Adventureland Verandah Teriyaki Sauce

This recipe is in the back of the cookbook in the "sauces" section. I decided to make teriyaki chicken out of it. While somewhat surprisingly sweet, it is not over the top. It was good and easy to make, so I would recommend it. 4 mickeys!
