I know, I know. The picture looks like crud on a plate. I don't know how to make it look any prettier. The good news is that this recipe is awesome! It wasn't nearly as time consuming as I thought it would be. Who would think that eggplant and mashed potatoes would go well together, but it was amazing! High recommendations to make this! 4 mickeys.
