Melanzane Alla Parmigiana

L'Originale Alfredo di Roma Ristorante - Italy, EPCOT

In all honestly, it's been awhile since I made this recipe, so I'm going off of pure memory and a few notes. While this same name was used for a recipe in the 1986 cookbook, this one is actually a bit different. This first recipe was served in the Contemporary Resort while this one is in EPCOT. Alredo's opened in 1982 and closed, turning into Tutto Italia in 2007. For more information about these changes go to www.yesterland.com. They have some great back history on Disney.   The recipe itself was fairly easy and fast to prepare. A good eggplant parmigiana if you need a recipe, but nothing that stands out as fantastic.
