Honey Mustard Dressing

This is such a great dressing! I love honey mustard dressing and have tried many bottled kinds. This stands up there with the best I've bought. I will make this from now on instead of buying it. It was really simple too.

I didn't eat this since I'm allergic, but my husband said it was fairly bland. It's mostly shrimp cooked in butter, salt, shallots, garlic, and Sauterne wine with a few tomatoes added in. You serve it over rice or noodles. It looked pretty bland. He gave it 3 mickeys.

How do I sum up this recipe.....water with a few veggies and a puff pastry on top. It was incredibly boring and tasteless. The pastry was good.... ugh, 2 mickeys.

Other than all the vegetable cutting, this recipe was really easy. Yes, it looked really long and time consuming, but it really wasn't. The flavor is great! The Mustard Sauce is what really makes it. If you don't like rutabaga it wouldn't matter if you left it out, it would still taste good. 4 mickeys! I will make this again.

This was a fairly easy recipe, despite the long complicated look of it. The flavor, however, was unimpressive. It wasn't bad, just average. It needed more seasoning of some kind - I'm not exactly sure what kind, but it needed something. 3 mickeys.

This is the second Chicken Florentine recipe we made from this book - this one is far better than the other one. Just a note - you have to marinade the chicken for at least 24 hours, so plan ahead. The sauce is great, but could easily be doubled so you have some to actually pour on the pasta. The recipe was also simple and fast to make. 4 mickeys!







Polynesian Ratatouille

This is great! It has eggplant, zucchini, crookneck squash, onion, tomatoes, garlic, and ginger root. It didn't take long to make at all. I didn't get the ginger root cut up small enough so some bites were...intense. Make sure you get it super small. I would also suggest putting this over rice, as the recipe is a bit runny and could use the basic flavor of rice. Really good. 4 mickeys.

This recipe contains zucchini, summer squash, carrots, and onions. You might wonder where the orange from the carrots is at....yeah, it's not there. I realized after I peeled the squashes that I didn't have carrots. Oops. I make a similar recipe to this often in the summer, so it was nothing new or exciting, yet it was still good. It's basically veggies cooked in garlic and butter. That's it. 3 mickeys.

Meatloaf

I can honestly say that meatloaf is meatloaf, so all I can compare this to is other meatloafs. This one has very little flavor. We had to coat it in ketchup to get it down, and we never finished off the leftovers. It was very boring and bland. Only 2 mickeys.

Once again, I made this with tough meat - if I made it again I would use a high quality meat. The recipe calls for beef sirloin tips - I might even use something better than that. It's a very average, non-seasoned stir fry. My thrown-together home stir fry has more flavor. Only 2 mickeys.
 




Hearty Chili

This is a fairly average chili, but it has a great flavor. It's made with top round beef. I used a little bit lower quality beef, so it was tough. If I did it again I would use a high quality cut for a nice melt-in-your-mouth chili. It takes about an hour to cook, so be ready to prepare it early.

I accidentally deleted the photo for this recipe. The entire recipe was very simple and fast - okay, so I cheated a bit. I used pre-ground pork instead of grinding my own. The sausage is great though - it has just enough spice and flavor, yet it doesn't override the meat. I used it in the "all in one" recipe. 4 mickeys. I would make it again. 
 

All In One

It's been over a month and I've been cooking up a storm. Welcome to my flood of Disney food posts. Let's start with the All in one. I have no idea why anyone would "request" this recipe. It's a biscuit with sausage and a fried egg. I literally just gave you the typed recipe. Yeah, super creative and complicated :::insert sarcasm here::::. There's not much more I can say. It's a biscuit with sausage and a fried egg. I did use the "fresh port sausage" recipe from this book, but that's my next post.
Totally average.

Peach Cobbler

I was so disappointed when I realized this recipe called for canned peaches instead of fresh. I later made a fresh peach cobbler - which was better than this recipe. Nothing about this recipe stands out - it's a standard canned peach pie recipe with no bottom crust. That's it. Pretty average.

The recipe called to put the filling in 4 individual soufflé dishes. I was lazy (and only one 2), so I made it into one giant "soufflé" dish - a.k.a. pie.

I thought this recipe was great. While a fairly normal recipe, the walnut topping was a wonderful addition.

Lo Mein Chili

We were pleasantly surprised by this recipe. It had WAY more heat than we expected (perhaps my "dash" of Tabasco was a bit too dashy). Be ready to have something to drink while you eat. The heat isn't excessive though, it's just present, and it goes away quickly. It is sort of like chili on spaghetti, but instead it's on Lo Mein noodles. Such a fast, easy recipe and so yummy. I will be making this again!

Jambalaya (pork)

French Market Restaurant still exists at DISNEYLAND, and it still serves Jambalaya! The menu appears to now serve a chicken and seafood Jambalaya instead of pork and seafood.

This Jambalaya is packed full of meat - pork, ham, polish sausage, Italian sausage, and shrimp. The recipe itself does not have a ton of heat. It would have had more heat had we used the right pepper. I sent my husband out with the grocery list. I asked for a yellow chili pepper. He brought me a yellow pepper. Not nearly as hot. You could also use spicy Italian sausage instead of mild like I used. It's also packed with veggies, which I loved. Onion, celery, green pepper, zucchini, and okra fill in the gaps. I greatly enjoyed this recipe (minus the stomach ache I had later because the shrimp was cooked into it - even though I didn't eat them). 4 mickeys.

Bridgetown Beef Fajitas

If I would have been smart I would have made the chicken and beef fajitas at the same time. But I wasn't. So instead I made them 6 months apart. It is literally the exact same recipe, just different meat. I think that the chicken held the flavor of the marinade better than the beef did. Once again, 4 mickeys.

Key Lime Pie

I'm not a big fan of anything lime. I particularly don't like key lime pie. Let me rephrase - the only key lime pie I've ever liked is one made by a co-worker of mine. Hers is amazing.  This pie was simple to make, beyond the fact that my hands were exhausted trying to squeeze all the fresh key limes. My advice to you - get a tool for this, or use get your husband to finish it like I did. :-)
Over all it was good, but not amazing. Nothing about it made me want more - yet again I don't like key lime pie. I let the rest of the family rate this one. They gave it 4 mickeys.

Green Beans

Once again, another non-existent restaurant.

The recipe is plain and simple, but very good. the fresh green beans are boiled, then cooked with olive oil, tomatoes, onion, and bacon. Yum. I will be making these again!

Once again, you will have to rely on my husband to know how this tasted. I had a horrible time getting the salmon cut and rolled correctly. I eventually gave up and just wrapped it around the filling and cooked them. The filling contains crabmeat, capers, shallows, tarragon, basil, white wine, and oysters. The sauce is then added to the top. It was pretty average (according to him). I can't say too much more because I didn't eat it. Sorry!


Bridgetown Chicken Fajitas

Bridgetown broiler is one of the little kiosks in the "food court-quick serve" area of Caribbean Beach Resort.

The one thing you need to remember is that these fajitas have to marinate over night...I forget to read ahead almost every time and wind up making alternative dinner plans! :-) The marinade on these is great. If you are looking for a spicy flavor you might want to add spicy salsa because the recipe itself has little to no heat.

Overall, 4 mickeys.

Stuffed Chicken Breast

Where was this served? I have no clue, the cookbook doesn't say. Somewhere in the park.

The recipe is in three parts: the chicken, shrimp mousse, and champagne sauce.
I can't say much about the mousse...I'm allergic to shellfish, but Greg said it was okay. The sauce on the top was good though. I don't drink, but almost anything cooked in some form of alcohol is typically good.  Even though the recipe seemed complicated and long, it really didn't take very long to prepare or cook. The most annoying thing was cutting the pockets into the chicken. I gave up and just sliced the pieces in half and make it into a "sandwich."

I've been looking for information about this restaurant, but I've found virtually nothing. All I know is that it's not there anymore. Perhaps it's now Tangaroa Terrace or Goofy's Kitchen? If anyone knows, please leave a comment!

I like all things poultry, but my husband likes red meat. He actually enjoyed this turkey chili. It was so easy to make and didn't take very long, at least as far as chili is concerned. It was ready in about 1.5 hours.  It wasn't a very spicy chili, but you can always add more heat to it if you wish.
