Rock Cornish Game Hen

 As complicated as this recipe appears, it really wasn't that hard. I was a bit nervous about preparing the hen....it turned out okay though. I couldn't keep each hen in one piece so I wound up just cutting them in half. Leave that to my culinary un-expertise.  The clay for sealing the pot was a way easier task than I had expected. Overall, this was a great recipe. It had just a bit of a game-ish flavor, but then again it wasn't chicken. It took about an hour to prepare before placing it in the oven to cook for another hour. Give yourself a few hours to get this dish ready to serve. 4 mickeys!




Potato Salad

 What can I say about this recipe? It's potato salad. It's not bad potato salad. It didn't knock my socks off. It's just plain old good potato salad. That's about all I can say. 3 mickeys.


Meatball Sauce for South Seas



South Seas Dining Room - Polynesian Village Resort

 Very very yummy. This recipe is in the "sauces" section of the cookbook. I decided to use them on frozen meatballs just to save time (don't judge me, I have a toddler :-)  ). I made meatball sandwiches out of them. For myself I used turkey meatballs, for my husband beef meatballs. The sauce is great. You could use it on tons of different things. I think it would be good on BBQ chicken also. 4 mickeys!

Coconut and Almond Chicken

 This chicken is served with a Pommery Mustard Sauce.  I loved how easy this was to make. It's a basic coated chicken, however the main coating contains coconut and almonds. Surprising heh?! The sauce is an awesome creamy mustard sauce. I can tell you that while this recipe gets 4 mickeys, it only gets 1 as a leftover. It wasn't nearly as good warmed up the next day.

Sherry Trifle

 Another "yum" to add to the list! This is a great dessert. Not the most amazing, but very good. I would make it again. It takes a bit of time, so make sure you give the custard sauce and strawberry sauce at least and hour to cool and chill up, if not more. I cheated this time and bought a pre-made pound cake. The only problem with this dessert? Trying to get it in the refrigerator :-)  4 mickeys














Brunch Baked Halibut Marcel

Okay, so I made a big substitute on this recipe, but I had a good reason. I couldn't find Halibut for the life of me. I checked multiple stores. No halibut. I settled for Haddock.Yes it's a fishier fish and not as great of quality, but it is a white fish so we made due.

With that said, this was horrendous. I couldn't eat more than 2 bites of it. We threw it out. I don't think a change in fish would have made it much better. It was so fishy. The sauce is made with a fish stock so that continued the fishy flavor. Only 1 mickey. Yuck!




Breast of Chicken Citron

 Club 33 - New Orleans Square, DISNEYLAND park

Club 33 is a members only, prestigious club in the Disneyland Park. It opened in 1967. From time to time memberships become available. You can only get dinner reservations through a current club member.

This citron chicken was good, but not amazing. The sauce was great. It didn't find it's way into the chicken though, only the breading. If there was a way to make the flavor stick more than it would get a higher rating. Watch when you broil the lemons as they brown quickly. I had trouble getting them off the cookie sheet. Perhaps putting some lemon juice/oil/butter under the lemons before placing them on the pan would help. 3 mickeys.





Bay Scallops in Cream Sauce

 As I've said every time, I'm not big on seafood. Recently I discovered that I have a mild allergy to shellfish, so I left the taste testing up to my husband on this one. According to him the recipe is as it says - scallops - cream sauce. It was pretty bland and tasteless, but not horrible. The next day he put it back on the stove and added Parmesan cheese, turning it into an Alfredo. He said it was much better that way. 2 mickeys to the original recipe.
