Chicken Maori

History: The Coral Isle Cafe has been replaced by Kona Cafe. I have eaten in the Kona Cafe and it is very good. This chicken sandwich is no longer on their menu, which is quite a shame because it's amazing!

This fried chicken breast is coated with a homemade BBQ sauce that has just the right combination of sweet and spicy. I literally licked the extra sauce off of my plate. It is awesome!

    Sauce

    2 T finely chopped onion
    1 T veggie oil or margarine
    1 C chili sauce
    1 T Worchestershire sauce
    1 1/2 t garlic powder
    1/2 t white pepper
    1/4 C pineapple juice
    1 small bay leaf (I just sprinkled in bay leaf pieces)
    3/4 C honey
    1 C tomato sauce
    1/2 t salt
    2 T brown sugar
    1 1/2 t chili powder
    1 T BBQ spice (combine 3/4 t chili powder, 1/4 t red pepper sauce and 1/4 t oregano)
    1 1/2 t liquid smoke
    1 T white vinegar
    Cayenne pepper to taste

    Saute onion in oil until golden brown. Combine with remaining ingredients in a saucepan. Bring to a boil, reduce heat and simmer, covered, for about 1 hr. Makes 3 cups

    Chicken

    4 skinless, boneless chicken breasts
    2 eggs, beaten
    1/2 C flour
    1/2 t salt
    1/8 t white pepper
    Oil/shortening/fat for frying
    4 Kaiser rolls
    butter, softened
    sesame seeds

    Pound breasts with wooden mallet until thin. Dip in beaten eggs, then in flour seasoned with salt and pepper. Fry in deep 375 degree oil or fat for 5 minutes. Remove and drain well. Heat Kaiser rolls in oven, split crosswise and buttered lightly. Place fried chicken breasts on each roll. Top with sauce and sesame seeds. Refrigerate any leftover sauce.
